Created for the Tokyo International Bar Show as the first Japanese Old Tom, Ki No Tou takes the classic Ki No Bi recipe and is softened post-distilling with Kokutou (literally "brown sugar") from Okinawande Yonaguni Island. Since the 17th century, Kokutou is made in such a way that it retains more minerals than other sugars, bringing more complexity. Ki No Tou is a Japanese gin created and bottled at Kyoto's artisanal distillery. The label contains two Kanji characters, one meaning "island" and the other "sugar" and was produced in collaboration with Kira Karacho, a member of the Karakami Karacho workshop founded in 1624.
