Tasting notes: Notes of ripe cherry and morello cherry,
semi-dried plum, and spices. Enters with appealing savouriness, mirroring the fragrances on the nose and adding fruit preserves; with aging, the palate lengthens,
offering delicate impressions of pepper, black
licorice and cocoa powder.
About the winery: Located in the heart of Valpolicella Classica, the ancient sandstone quarry, dating back to the 15th century, testifies to the intimate interrelationship between Zyme's philosophy and its local corner of the earth. Using sustainable agriculture, the Domaine cultivates 30-hectare of vines. The name Zyme, from Greek, means "yeast".
