About the winery:
The estate has been created 6th generations ago by the Pabiot family. Jonathan took over the domain in 2005. He successfully persuaded his father Didier to convert the family vineyard to organic viticulture. Today the domain is one of the three estates that follow biodynamic and natural practices in the appellation. With genuine respect for the environment, Jonathan doesn't push the vines to produce massively. This low-yield method, combined with biodynamic practices, allow the grapes to give the very best of it selves.
The 19 hectares domain is located in Loges, Pouilly-sur-Loire in France.
The appellation Pouilly-Fume is mainly known for white wines that are floral and fruity. There, the terroir is an association of a semi-continental climate with millions of years of old soil. The ground is made up of Kimmeridgian marls, hard limestone and flint, giving a mineral, fine and bright aspect to the wine.
