Tasting notes: This Chablis has a subtle, lightly toasted nose of citrus and white fruits. The palate is full-bodied, perfectly balanced, and we find a nice fruit and a nice final persistence on citrus notes.
About the winery:
Third generation vigneron, Thomas Pico started his estate in Courgis in 2004. Motivated to take a qualitative leap in a new direction, he began a strict yield control program and a conversion to organic viticulture. All work at the Domaine is done by hand. Pico ferments all wines using indigenous yeast, and he bottles without fining and filtration. Most of his wines are selection massale planted near the two highest altitude villages in the appellation (Courgis and Preys), with vineyards up to 300 meters in elevation.
