THE VINEYARD A walled-in (clos) vineyard at the top of the L'Etoile appellation, a relic of a historic castle built by Jean I of Chalon-Arlay. The walls and landscape provide natural cooling. The vines are trained in Guyot method, pruned short to maximize concentration. Sustainable viticulture.
